Italian Pasta Salad

Italian Pasta Salad is loaded with pasta, fresh vegetables, cheese, and zesty dressing, perfect for cookouts or potlucks.

Ingredients 

  • 8 oz dry rotini pasta
  • 1 english cucumber, diced
  • 4 oz mozzarella cheese, cubed into small pieces
  • 10 slices of salami, cut into strips
  • ¼ cup chopped artichoke hearts
  • 1 ½ cups cherry tomatoes, sliced
  • ¼ cup black olives, sliced
  • ¾ cup Italian dressing

Instructions 

  • To a large pot of boiling water on the stove add the pasta and cook according to the box instructions. Drain and rinse with cold water to cool down.
  • Add the pasta to a large bowl along with the rest of the ingredients. Stir well and refrigerate for an hour. Enjoy!
