This Mini Sheet Pan Meat Loaf is a practical twist on classic meatloaf that cooks faster and portions easily. The individual loaves bake right in the center of the pan while the vegetables roast around them. Everything finishes together for a full meal on one sheet pan. It is a dependable comfort dinner without extra pans or cleanup.

Mini sheet pan meat loaf is made with ground beef, onion, egg, milk, ketchup, garlic, breadcrumbs, and seasonings. Individual loaves bake on a sheet pan surrounded by baby potatoes and green beans. How to Make Mini Sheet Pan Meat Loaf

Step 1: Preheat oven to 425 degrees.

Step 2: In a large bowl, mix all meatloaf mixture ingredients together.

Step 3: In a medium bowl, mix the vegetable ingredients together.

Step 4: Line a sheet pan with parchment paper. Spread vegetables around the edges, leaving space in the center.

Step 5: Form four mini meatloaves and place in the center of the pan.

Step 6: Bake for 25 minutes.

Step 7: Whisk together all sauce ingredients.

Step 8: Remove pan from oven, brush sauce over the tops of the meatloaves.

Step 9: Return to oven and bake 15–20 more minutes until cooked through.

Step 10: Serve warm.

    Great Recipe for meatloaf ! I switched up the veggies, using Brussel sprouts, leeks and red bell peppers. But the meatloaf and topping recipe was perfect, even though I did forget the bread crumbs. That’s probably a good thing for me. I made Teriyaki meatballs with bread crumbs last week and I didn’t like the texture. I am usually rather apathetic toward meatloaf, but the mini-size, open baked recipe was great. This is going into the regular meal rotation with different sides each time. Thank you!

    Made this last night for dinner and it was fabulous! I used 93/7 beef. I substituted plain greek yogurt for the milk since all I ever have on hand for milk is Unsweetened Vanilla Almond Milk. Didn’t think that would work. I think I might start adding greek yogurt to all my meatloaf recipes! I used lemon pepper seasoning on the veggies. All in all – great recipe and will be doing again. I bet the leftovers make amazing sandwiches :-).

    I made the Meatloaf only. I think it was very tasty. I am not sure how you would make this with a sheet pan as my meatloaf had so much fat coming out of it that I would be afraid it would have gotten into the potatoes. The meatloaf by itself was delicious.

    This turned out perfect. So good.
