BLT Pasta Salad

BLT Pasta Salad takes all the flavors of a classic BLT sandwich and tosses them with pasta in a creamy dressing.

Ingredients 

  • 5-6 strips bacon
  • 8 oz dry rotini pasta
  • ½ red onion, diced
  • 1 avocado, cut into small cubes
  • 5 oz cheddar cheese, cut into small cubes
  • 1 ½ cups cherry tomatoes, sliced
  • 3 cups romaine lettuce, thinly sliced
  • ¾ cup ranch dressing

Instructions 

  • To a large pot of boiling water on the stove add the pasta and cook according to the box instructions. Drain and rinse with cold water to cool down.
  • To a skillet on the stove add the bacon and cook through. Remove to a plate lined with paper towel to absorb any grease. Crumble the bacon up in to bite sized pieces.
  • Add all of the ingredients into a large bowl. Stir well and enjoy now or refrigerate for later.
