
BLT Pasta Salad
Ingredients
- 5-6 strips bacon
- 8 oz dry rotini pasta
- ½ red onion, diced
- 1 avocado, cut into small cubes
- 5 oz cheddar cheese, cut into small cubes
- 1 ½ cups cherry tomatoes, sliced
- 3 cups romaine lettuce, thinly sliced
- ¾ cup ranch dressing
Instructions
- To a large pot of boiling water on the stove add the pasta and cook according to the box instructions. Drain and rinse with cold water to cool down.
- To a skillet on the stove add the bacon and cook through. Remove to a plate lined with paper towel to absorb any grease. Crumble the bacon up in to bite sized pieces.
- Add all of the ingredients into a large bowl. Stir well and enjoy now or refrigerate for later.
