Skillet Lasagna One-Pot

1 lb Italian sausage
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp Italian seasoning
dash of salt and pepper
24oz marinara sauce, any jared brand will work
2 cups chicken broth, may need more while the noodles cook
14oz diced tomatoes
3/4 lb lasagna noodles, broken into bite sized pieces
- Cheesy Mixture
1/3 cup cottage cheese OR ricotta cheese
1/4 cup parmesan cheese
1 cup mozzarella cheese
Directions
- To a deeper skillet add the sausage and cook through, once cooked remove any access grease.
- Stir in the seasonings. Now dump in the marinara sauce, broth, diced tomatoes, and lasagna noodles. Let simmer covered for 20 minutes covered or until the noodles are cooked, stirring frequently so the noodles don’t stick. NOTE: you might need to add more broth in if the liquid gets too low while simmering.
- Add the “cheesy mixture” in to a small bowl and stir well.
- Once the noodles are tender turn the heat off and stir in the cheesy mixture once the cheese melts it’s ready to serve. Enjoy!

This was easy and delicious! Husband said this recipe is a keeper. Took longer than 20 minutes to make the noodles soft, though.
This was a hit with the whole family. So much easier than making a whole pan of lasagna and great flavor. I used about half a lb of ground turkey and added zucchini and peppers. Thanks for the great recipe! Love your videos!
