Ingredients
1 lb Italian sausage
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp Italian seasoning
dash of salt and pepper
24 oz marinara sauce, any brand
2 cups chicken broth, plus extra if needed
14 oz diced tomatoes
3/4 lb lasagna noodles, broken into bite-sized pieces
- Cheesy Mixture
1/3 cup cottage cheese or ricotta cheese
1/4 cup parmesan cheese
1 cup mozzarella cheese
Directions
- Add the sausage to a large skillet and cook through. Once cooked, remove any excess grease.
- Stir in the seasonings. Add the marinara sauce, broth, diced tomatoes, and lasagna noodles, and bring to a simmer. Cover and let simmer for 20 minutes, or until the noodles are cooked, stirring frequently so the noodles don’t stick. You might need to add more broth in if the liquid gets too low while simmering.
- Add the ingredients for the cheesy mixture to a small bowl and stir well.
- Once the noodles are tender, turn the heat off and stir in the cheesy mixture. Let the cheese melt and serve. Enjoy!

This was easy and delicious! Husband said this recipe is a keeper. Took longer than 20 minutes to make the noodles soft, though.
This was a hit with the whole family. So much easier than making a whole pan of lasagna and great flavor. I used about half a lb of ground turkey and added zucchini and peppers. Thanks for the great recipe! Love your videos!
