These easy Taco Stuffed Peppers take everything I love about taco night and turn it into a simple baked dinner. Bell pepper halves are filled with seasoned ground beef, salsa, sour cream, and pinto beans, then topped with cheese and baked until the peppers are tender.

Ingredient Notes

Bell peppers: I use green bell peppers, but you can use any color you like.

Ground beef: Brown the beef first and drain off any excess grease before making the taco filling.

Taco seasoning: This gives the beef plenty of taco flavor without needing a long list of spices.

Pinto beans: Drain and rinse the beans before stirring them into the filling.

Salsa and sour cream: These keep the taco mixture creamy and flavorful.

How to Make Taco Stuffed Peppers

  1. Preheat the oven to 350°F.
  2. Slice the bell peppers in half lengthwise and remove the seeds.
  3. Place the pepper halves cut-side up in a 9×13 baking dish with 1/4 cup of water.
  4. Bake the peppers for 15 minutes while you prepare the taco filling.
  5. Brown the ground beef in a skillet and drain off any excess grease.
  6. Add the taco seasoning and water and stir until combined.
  7. Stir in the salsa, sour cream, and drained pinto beans.
  8. Remove the peppers from the oven and generously fill each one with the taco mixture.
  9. Top with shredded cheese and bake for another 25–30 minutes, or until the peppers are tender and the cheese is melted.

My Pro Tip

Tips for the Best Taco Stuffed Peppers

  • Pre-baking the peppers gives them a head start so they become tender by the time the filling is hot.
  • Drain the ground beef well before adding the other ingredients.
  • Any color of bell pepper works. Red, yellow, and orange peppers will taste a little sweeter than green.
  • Add your favorite taco toppings before serving. Sour cream, salsa, cilantro, or diced tomatoes are all easy options.

Taco Stuffed Peppers

All the bold flavor of tacos, tucked into sweet bell peppers and baked to perfection—an easy, low-carb dinner that doesn’t skimp on taste.

Ingredients 

  • 4 green bell peppers, or any color
  • ¼ cup water
  • 1 lb ground beef
  • 2 tbs taco seasoning
  • ⅓ cup water
  • ½ cup salsa
  • ⅓ cup sour cream
  • 1 cab pinto beans, drained and rinsed

Instructions 

  • Preheat oven to 350 degrees. Slice peppers in half lengthwise and remove the seeds from inside. Place the peppers facing up in a 9×13 baking dish with 1/4 cup of water bake for 15 minutes while you work on the rest of the steps
  • In a skillet brown the ground beef then remove any access grease. Add the taco seasoning and water to the beef and stir to combine. Add in the salsa, sour cream, and drained and rinsed pinto beans stir to comnine.
  • Remove the peppers from the oven and now stuff them with plenty of the taco mixture. Sprinkle cheese on top and bake for 25-30 minutes. Enjoy
