Taco Stuffed Peppers

All the bold flavor of tacos, tucked into sweet bell peppers and baked to perfection—an easy, low-carb dinner that doesn’t skimp on taste.

Ingredients 

  • 4 green bell peppers, or any color
  • ¼ cup water
  • 1 lb ground beef
  • 2 tbs taco seasoning
  • cup water
  • ½ cup salsa
  • cup sour cream
  • 1 cab pinto beans, drained and rinsed

Instructions 

  • Preheat oven to 350 degrees. Slice peppers in half lengthwise and remove the seeds from inside. Place the peppers facing up in a 9×13 baking dish with 1/4 cup of water bake for 15 minutes while you work on the rest of the steps
  • In a skillet brown the ground beef then remove any access grease. Add the taco seasoning and water to the beef and stir to combine. Add in the salsa, sour cream, and drained and rinsed pinto beans stir to comnine.
  • Remove the peppers from the oven and now stuff them with plenty of the taco mixture. Sprinkle cheese on top and bake for 25-30 minutes. Enjoy
