Ingredients for Slow Cooker Chicken Burrito Bowls:

  • Protein: use boneless skinless chicken breasts
  • Seasoning: you will need to use chili powder, cumin, black pepper, salt, dried oregano, and minced garlic
  • Juice: use fresh lime juice if you can for the best results
  • Cans: to keep it simple use cans of Rotel, canned black beans that have been drained and rinsed, and a can of corn drained
  • Onion: I like to use diced red onion to add to the rainbow of food for these delicious chicken rice bowls

Optional toppings for the end:

  • Cooked white rice
  • Sliced lettuce
  • Avocado
  • Diced tomato

How to make Slow Cooker Chicken Burrito Bowls:

To a slow cooker add all of the ingredients except the “toppings for the end”.

Stir and place the lid on top cook on LOW for 6 hours OR HIGH for 4-5 hours or until the chicken is completely cooked. 

Once cooked shred the chicken with two forks and serve in a bowl with your favorite burrito bowl toppings.

How to store leftover Santa Fe Chicken:

Fridge: Place the leftover slow cooker chicken into an airtight container and store it in the fridge for up to 5 days. 

Freezer: If you want to make a big batch of this chicken you and use half and freeze the other half. Place the second half into a large freezer bag and store it for up to 3 months.

Ingredients 

  • 1 lb chicken breast
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp pepper
