This is your new favorite burrito bowl! This recipe was inspired by Chipotle’s burrito bowls, and in my opinion, these homemade slow cooker bowls are just better. Toss everything into the slow cooker and forget about it until dinnertime—so easy and delicious! If you want to make simple chicken burritos, you just need to use a large burrito tortilla in place of a bowl and dish up everything into the burrito, fold the sides in, and roll everything up.

  • Chicken: use boneless skinless chicken breasts
  • Seasoning: you will need to use chili powder, cumin, black pepper, salt, dried oregano, and minced garlic
  • Lime Juice: use fresh lime juice if you can for the best results
  • Cans: to keep it simple use cans of Rotel, canned black beans that have been drained and rinsed, and a can of corn drained
  • Onion: I like to use diced red onion to add to the rainbow of food for these delicious chicken rice bowls

Step 1. To a slow cooker add all of the ingredients except the “toppings for the end”.

Step 2. Stir and place the lid on top cook on LOW for 6 hours OR HIGH for 4-5 hours or until the chicken is completely cooked. 

Step 3. Once cooked shred the chicken with two forks and serve in a bowl with your favorite burrito bowl toppings.

  • 1 lb chicken breast
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp pepper
