Ingredients

  • 1 lb chicken breast

  • 1 tsp chili powder

  • 1/2 tsp cumin

  • 1/2 tsp pepper

  • 1 tsp salt

  • 1/2 tsp dried oregano

  • 1 lime juiced

  • 10 oz can Rotel

  • 15 oz can black beans, drained and rinsed

  • 15 oz can corn, drained

  • 2 tbs minced garlic

  • 1 red onion, diced

  • Optional toppings for the end:
  • Cooked white rice

  • Sliced lettuce

  • Avocado

  • Diced tomato

Directions

  • To a slow cooker add all of the ingredients except the “toppings for the end”. Stir and place the lid on top cook on LOW for 6 hours OR HIGH for 4-5 hours or until the chicken is completely cooked. Once cooked shred the chicken with two forks and serve in a bowl with your favorite burrito bowl toppings.
