  • white onion, diced
  • minced garlic
  • salt
  • oregano
  • paprika
  • pepper
  • can diced tomatoes
  • can cannellini beans
  • bag frozen spinach
  • water
  • vegetable (or chicken) bouillon cube

How to Make White Bean and Spinach Soup

Making this soup is very simple and quick. We love to see it!

Heat a Dutch oven over medium heat and add the oil. Add the onion and cook for a few minutes or until it starts to soften. Stir in the minced garlic and let that cook for a few seconds, then stir in the remaining ingredients. Cover with the lid and let the soup simmer for 15 minutes, stirring occasionally. Serve topped with a little Parmesan cheese and enjoy!

What to Serve with White Bean and Spinach Soup

I love a cozy soup. I especially love it paired with homemade bread! You could serve this with my Easy One Hour Dinner Rolls or Garlic Pull Apart Rolls.   • 1 tbsp olive oil
  • ½ white onion, diced
  • 1 tbsp minced garlic
  • 1 tsp salt
  • 1 tsp oregano
  • 1 tsp paprika
  • ½ tsp pepper
  • 28 oz can diced tomatoes
  • 15.5 oz can cannellini beans
  • 12 oz bag frozen spinach
  • 6 cups water
  • 1 vegetable (or chicken) bouillon cube

Instructions 

  • To a large pot or Dutch oven over medium heat, add the oil. Once hot, add the onion and cook for 4-5 minutes, until softened. Stir in the minced garlic, then stir in the remaining ingredients. Cover and let simmer for 15 minutes, stirring occasionally. Serve and enjoy!

    Made this recipe yesterday and it was great comfort food! Added a pound of sausage for extra flavor and some other seasonings (red pepper, cumin, and an all purpose seasoning) I had on hand. So good and so satisfying for such a low cost and we had leftovers to spare.
